We do have some 18.5 x 8.50-8 tires available with the Kenda K389 # AM40537 or a full wheel and tire with the Kenda 18x8.50-8 Bias Golf Cart Tire with 8" White Wheel part # AM90002. The wheels have a 4 on 4" bolt pattern, so you would want to make sure that your current hubs use that bolt pattern. These both come with a two year warranty and have a load range b rating which is sufficient for up to 815 lbs. When it comes to The Kenda 205/50-10 Bias Golf Cart Tire with 10 inch White Wheel - 4 on 4 - Load Range B # AM90016 the kit only comes with the tire and rim. The Lug Nuts # AM90049 are sold separately.
The lug nut fits 1/2 inch diameter wheel bolts and is chrome plated for durability and corrosion resistance. They measure out to 1-3/4 inches long by 3/4 inches outer diameter.

I would recommend # AM3H370. It is a 205/65-10, 10 inch wide wheel with a bolt patter of 4 on 4. It has a load range C which has a maximum load of 1,100 pounds at 50 psi, with a speed rating M which is 81 mph.

In order to see if you can use larger wheels/tires on your pontoon boat trailer you'll need to check a few things. Checking with the trailer maker, using the trailer VIN, is a good idea too. The manufacturer may be able to offer you some guidance specific to your particular trailer.

To choose a compatible hub assembly for any spindle the key is knowing the inner and outer bearing part numbers, or if they are not available, precise dimensions of the spindle at the points where the bearings and grease seal ride. These points on the spindle are noted on the diagram I linked for you. Once you know the bearings this will tell you which hubs will fit properly.

Unfortunately, I have no way of seeing what is in your cart. However, for your 2021 Ram 1500, I recommend the Thule WingBar Evo Crossbars # TH711520 with the clamp feet # TH710501 and fit kit # TH145199. These crossbars have a maximum load capacity of up to 220-lbs.

To add brakes and the wiring to support their operation to your 5 x 8 cargo trailer you'll want to make sure the brakes have the correct rating for your axle (which you did) and also that they use the same mounting bolt pattern as your installed brake flanges. The brakes you referenced, left and right brake kit # AKEBRK-35-SA, use a 4-bolt flange pattern.
